My main dish for lunch the other day at Ninh Kieu was the vegetarian chicken vermicelli bowl. It was every bit as satisfying as its meat counterpart.
The soy chicken substitution tasted very authentic and had the right texture. I used soy sauce on my noodles - the accompanying fish sauce was the real thing, which is important for strict vegetarians to be aware of.
